Thai Coconut Curry

Namaste yogis!

If you recall from this month's "choose to live well challenge", part two is all about cleansing. Well I am now three days into my three week vegan cleanse. So far it has been going exceptionally well, although I expect to endure a few struggles as I dive deeper into the 21 days. (You can check up on the types of food I've been eating on twitter.)  Most people are quite concerned as to what I will be eating to nourish my body, but I have been planning many different kinds of meals to keep things interesting as well as fulfilling to my dietary needs. 

Today I would like to share with you a recipe that my sister had shared with me a few days back. This version of Thai Coconut Curry was created by Jonsi and Alex; who are both musicians (you may have heard some of their music in my yoga classes) as well as food enthusiasts. This meal is vegan as well as raw, so it will be simple to prepare...no cooking! Plus it's full of nutrients!

 

Ingredients for curry:

  • 2 1/2 cups of water
  • 1 cup dried or fresh coconut
  • 2 tablespoons olive oil
  • 1 1/2 tablespoons soy sauce
  • 1/2 thumb sized piece of ginger root
  • 1 small onion or 1/2 red onion
  • 2 cloves garlic
  • 1/3 squeezed lemon for juice
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • pinch of cayenne pepper
  • 1/8 red chili pepper
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • dash of curry powder

Ingredients for noodles:

  • 1/2 zucchini 
  • 1/3 cucumber
  • 1/4 red bell pepper
  • 1 tomato

Directions: 

First blend water and coconut alone. Then stain coconut pieces and put liquid back into the blender. Add all other curry ingredients into blender and blend until completely creamy. 

Then chop up the vegetables as thin as possible to create the noodles.

Lastly place veggie noodles in bowl and pour curry over top.
